This Hobo Casserole combines ground beef, layered potatoes, and mixed vegetables for a hearty and comforting meal that’s easy to make and perfect for busy nights.
Ingredients
1 lb ground beef
1 medium onion
diced
2 cloves garlic
minced
4 medium potatoes
thinly sliced
2 cups mixed vegetables (frozen or fresh
such as corn
peas
and carrots)
1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
1 cup shredded cheese (cheddar or your choice)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika (optional)
1 tablespoon olive oil (if using lean beef)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and cook the ground beef until browned. Add onion and garlic, sautéing until soft.
- In a large bowl, mix the cooked beef mixture with mixed vegetables, cream of mushroom soup, salt, pepper, and paprika.
- Layer half of the sliced potatoes in a greased casserole dish, then spread the beef and vegetable mixture over them. Top with the remaining potato slices.
- Cover the casserole with foil and bake for 30 minutes. Remove the foil, sprinkle shredded cheese on top, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
Feel free to customize the mixed vegetables according to your preference or what you have on hand. A side salad pairs great with this dish.
