Hobo Casserole is a hearty and comforting dish featuring layers of ground beef, potatoes, and cheese, baked to perfection for a satisfying meal.
Ingredients
1 lb ground beef
1 tbsp olive oil
1 medium onion chopped
2 cloves garlic minced
4 medium potatoes thinly sliced
1.5 cups shredded cheddar cheese
0.5 cup grated Parmesan cheese
1 tsp dried Italian seasoning
0.5 tsp paprika
salt and pepper to taste
0.5 cup beef broth or water
0.25 cup milk optional
for creaminess
fresh parsley optional for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened.
- Add the ground beef to the skillet, browning until fully cooked. Season with Italian seasoning, paprika, salt, and pepper.
- In a 9×13 inch baking dish, layer half of the thinly sliced potatoes at the bottom.
- Spread the cooked ground beef mixture over the potatoes, followed by half of the cheddar cheese.
- Add the remaining potatoes on top, then pour in the beef broth. If using, add the milk for added creaminess.
- Top with the remaining cheddar cheese and sprinkle with Parmesan cheese.
- Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
Feel free to add some vegetables like carrots or green beans for extra nutrition. This dish can also be made ahead and stored in the refrigerator.
