Ingredients

1 cup raspberries (fresh or thawed frozen)

1 tablespoon granulated sugar

1 teaspoon vanilla extract

8 oz cream cheese

⅓ cup granulated sugar

1 large egg

½ teaspoon vanilla extract

1 cup all-purpose flour (or gluten-free blend)

¾ cup Dutch-process cocoa powder

sifted

¼ teaspoon salt

¾ + 2 tbsp cup refined coconut oil or neutral oil

1 ½ cups granulated sugar

1 tablespoon vanilla extract

3 large eggs

room temperature


Instructions

  • Preheat your oven to 350°F (175°C) and grease a heart-shaped baking pan.
  • In a small bowl, combine the raspberries, 1 tablespoon of granulated sugar, and 1 teaspoon of vanilla extract. Mash gently and set aside to create a swirl mixture.
  • In a large bowl, beat the cream cheese with ⅓ cup of granulated sugar, 1 egg, and ½ teaspoon of vanilla extract until smooth. Set this cheesecake mixture aside.
  • In another bowl, whisk together the flour, cocoa powder, and salt.
  • In a large mixing bowl, beat the refined coconut oil, 1 ½ cups of granulated sugar, and 1 tablespoon of vanilla extract together. Add the 3 eggs, one at a time, mixing well after each addition.
  • Slowly add in the dry ingredients to the wet mixture until combined.
  • Pour half of the brownie batter into the prepared pan. Drop spoonfuls of the cheesecake mixture and the raspberry swirl over the top. Then add the remaining brownie batter, swirling remaining raspberry mixture on top.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before cutting into heart shapes and serving.

Notes

For a gluten-free version, replace all-purpose flour with a gluten-free blend. Adjust baking time if using a different pan size.
