These Healthy Sourdough Discard Kolaches are a delightful twist on a classic pastry, utilizing leftover sourdough starter for a unique flavor and texture. Filled with a creamy cheesecake mixture and topped with a crumbly streusel, they’re the perfect treat for any occasion.
Ingredients
3 tbsp white sugar
3/4 cup whole grain spelt flour
1/4 cup active sourdough discard
1/2 cup milk
1 cup all-purpose einkorn flour
1 large egg
5 tbsp unsalted butter
1 large egg yolk
1 tsp sea salt
6 oz softened cream cheese
1/4 tsp pure vanilla extract
1 to 2 tsp fresh lemon juice
1/4 cup white sugar
1 1/2 tsp all-purpose flour
a pinch salt
1 tbsp plus 1 tsp white sugar
1/2 tbsp unsalted butter
1 tbsp plus 1 tsp all-purpose flour
Instructions
- In a large bowl, mix together the whole grain spelt flour, active sourdough discard, warm milk, all-purpose einkorn flour, egg, melted butter, egg yolk, sugar, and sea salt until a sticky dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rise for approximately 1 hour, or until doubled in size.
- In the meantime, prepare the cream cheese filling by mixing softened cream cheese, vanilla extract, lemon juice, sugar, flour, and a pinch of salt until smooth.
- For the streusel topping, combine white sugar, chilled butter, and all-purpose flour in a small bowl, mixing until crumbly.
- Once the dough has risen, preheat the oven to 350°F (175°C). Punch down the dough and divide it into 8 equal pieces.
- Roll each piece into a small circle and place a dollop of cream cheese filling in the center. Fold over the edges to enclose the filling and place seam side down on a baking sheet lined with parchment paper.
- Sprinkle the streusel topping over each kolache and let them rest for 15 minutes.
- Bake for 25-30 minutes until golden brown. Let cool slightly before serving.
Notes
For a variation, feel free to substitute the cream cheese filling with fruit preserves or nut butters. These kolaches are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
