Ingredients
1 ½ Cups oats old fashioned oats or rolled oats
1 ¼ Cups flour
½ cup sugar
1 ½ teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
pinch ground nutmeg
1 whole egg
¼ cup oil
1 teaspoon vanilla
1 ½ cups ripe bananas mashed (about 3–4 bananas)
½ cup oats old fashioned oats (for topping)
¼ teaspoon cinnamon (for topping)
2 Tablespoons brown sugar (for topping)
2 Tablespoons melted butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the old fashioned oats, flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the egg, oil, vanilla, and mashed bananas until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix the topping ingredients: oats, cinnamon, brown sugar, and melted butter.
- Divide the muffin batter evenly into the prepared muffin tin, and sprinkle the topping mixture over each muffin.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
These muffins can be stored in an airtight container for up to a week. They also freeze well for up to three months.
