Ingredients

Boneless

skinless chicken thighs

Soy sauce

Brown sugar

Pineapple juice

Garlic

Ginger

Sesame oil

Rice vinegar

Cornstarch slurry

Green onions

Sesame seeds


Instructions

  • In a bowl, mix soy sauce, brown sugar, pineapple juice, minced garlic, minced ginger, sesame oil, and rice vinegar to create the teriyaki sauce.
  • Place the chicken thighs in a resealable bag, pour half of the teriyaki sauce over them, and marinate for at least 30 minutes, or up to 2 hours for more flavor.
  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Arrange the marinated chicken thighs on the prepared baking sheet and roast for 25-30 minutes, basting with the remaining sauce halfway through.
  • If desired, mix cornstarch with water to make a slurry, and add to the remaining sauce in a saucepan over medium heat to thicken.
  • Once cooked, slice the chicken and serve drizzled with the thickened sauce, garnished with green onions and sesame seeds.

Notes

For a spicier kick, add red pepper flakes to the marinade. Serve with steamed rice or vegetables for a complete meal.
