Ingredients
Boneless skinless chicken breasts
Fresh or canned pineapple chunks
Red and yellow bell peppers
Red onion wedges
Olive oil
Garlic

Low-sodium soy sauce
Pineapple juice
Honey or brown sugar
Rice vinegar or apple cider vinegar
Cornstarch and water
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken pieces, olive oil, garlic, paprika, chili flakes, salt, and black pepper to coat the chicken evenly.
- Add pineapple chunks, bell peppers, and red onion wedges to the bowl and mix well.
- In a small saucepan, combine soy sauce, pineapple juice, honey or brown sugar, vinegar, and bring to a simmer. If desired, mix cornstarch with water and add to the sauce to thicken.
- Spread the chicken and vegetable mixture onto a baking sheet and drizzle the sauce over it.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
