1 lb lean ground beef
2 medium sweet potatoes
peeled and diced
1 avocado
sliced
1 cup cottage cheese
1 yellow onion
diced
2 tbsp olive oil
1 taco seasoning packet
2 tbsp hot honey
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp cinnamon
Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the diced sweet potatoes in 1 tablespoon of olive oil, salt, and pepper, and spread them out on the prepared baking sheet.
- Bake the sweet potatoes in the preheated oven for about 25-30 minutes, or until tender and golden brown.
- In a skillet over medium heat, add the remaining tablespoon of olive oil, followed by the diced onion. Sauté until translucent.
- Add the ground beef to the skillet along with the taco seasoning, hot honey, paprika, garlic powder, cinnamon, salt, and pepper. Cook until the beef is browned and cooked through.
- Once the sweet potatoes are done, assemble the bowls by layering sweet potatoes, ground beef mixture, sliced avocado, and cottage cheese.
