Description
This Grilled Cheese Burrito combines the flavors of Mexican rice, seasoned taco meat, and a creamy chipotle mayo to create a deliciously hearty meal wrapped in a melty cheese-filled tortilla.
Ingredients
1 cup long grain white rice
1 tablespoon avocado oil
1½ cups chicken broth
4 ounces tomato sauce
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon chicken bouillon
¼ teaspoon salt
1 pound ground beef
1 tablespoon chili powder
1 teaspoon ground cumin
¾ teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried oregano
¾ cup mayonnaise
¼ cup sour cream
2 tablespoons lime juice
1 teaspoon honey
2 chipotle chiles in adobo sauce
1 teaspoon garlic powder
½ teaspoon smoked paprika
¼ teaspoon salt
8 large tortillas
2 cups Mexican Rice
1 pound taco meat
1 cup tortilla strips
¾ cup nacho cheese sauce
½ cup sour cream
½ cup chipotle mayo
1 cup Mexican cheese blend
Instructions
- In a medium saucepan, heat avocado oil over medium heat. Add rice and toast for 2-3 minutes.
- Add chicken broth, tomato sauce, onion powder, garlic powder, chicken bouillon, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- In a skillet, cook ground beef over medium heat. Drain excess fat, then add chili powder, cumin, salt, garlic powder, onion powder, and oregano. Cook until browned, about 5-7 minutes.
- For chipotle mayo, blend mayonnaise, sour cream, lime juice, honey, chipotle chiles, garlic powder, smoked paprika, and salt until smooth.
- To assemble burritos, lay a tortilla flat, spread ¼ cup of cooked Mexican rice, add ¼ pound taco meat, a sprinkle of tortilla strips, warm nacho cheese sauce, a dollop of sour cream, a spoonful of chipotle mayo, and a handful of Mexican cheese blend.
- Fold in the sides and roll tightly to wrap the burrito. Repeat with remaining tortillas.
- Heat a skillet over medium heat and place the burritos seam-side down. Cook until golden brown on both sides, about 3-4 minutes per side.
- Serve warm with extra chipotle mayo and sour cream on the side.
