1 cup all-purpose flour
¼ cup powdered sugar
¼ tsp salt
½ cup butter (room temperature
cut into 8 pieces)
1 ½ cups granulated sugar
¼ cup all-purpose flour
4 large eggs
1 Tablespoon grapefruit zest
1 cup grapefruit juice (or a combination of grapefruit and lemon juice)
pink food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a mixing bowl, combine 1 cup of flour, powdered sugar, and salt. Add the butter pieces and blend until crumbly.
- Press the mixture into the bottom of the prepared baking dish to form the crust.
- Bake for 15 minutes until lightly golden.
- While the crust is baking, prepare the filling by whisking together 1 ½ cups granulated sugar, ¼ cup flour, and eggs in a bowl.
- Add grapefruit zest, grapefruit juice, and food coloring (if using) to the mixture and stir until smooth.
- Pour the filling over the baked crust and return to the oven.
- Bake for an additional 15-20 minutes until the filling is set and slightly golden on top.
- Allow to cool completely before cutting into squares and serving.
Notes
For best results, chill the bars in the refrigerator before slicing to ensure clean cuts. Adjust the amount of grapefruit juice based on your taste preference.
