2 medium lemons
juiced and zested
2 tablespoons butter
4 egg yolks

Instructions
- In a saucepan, whisk together 1 cup white sugar, 2 tablespoons all-purpose flour, 3 tablespoons cornstarch, and ¼ teaspoon salt.
- Gradually stir in 1 ½ cups water and cook over medium heat, stirring constantly until the mixture thickens and bubbles.
- Remove from heat and stir in the juice and zest of 2 lemons and 2 tablespoons butter until melted.
- In a bowl, beat 4 egg yolks. Gradually whisk in a small amount of the hot lemon mixture to temper the yolks, then stir the yolk mixture back into the saucepan.
- Return to heat and cook for 2 more minutes, stirring constantly. Pour the filling into the baked pie crust.
- In a clean mixing bowl, beat 4 egg whites until soft peaks form, then gradually add ½ cup white sugar, continuing to beat until stiff peaks form.
- Spread the meringue over the hot lemon filling, sealing the edges. Use a spatula to create peaks and swirls.
- Bake in a preheated oven at 350°F (175°C) for about 10 to 12 minutes, or until the meringue is golden brown.
- Cool on a wire rack before serving.
Notes
For best results, ensure your egg whites are at room temperature before beating for a fluffier meringue.
