Ingredients

½ cup butter

¾ cup white sugar

1 large egg beaten

1 cup quick-cooking oats

3 tablespoons all-purpose flour

1 teaspoon vanilla extract

¼ teaspoon salt

¼ teaspoon baking powder


Instructions

  • Preheat your oven to 350°F (175°C) and lightly spray a baking sheet with cooking spray.
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the beaten egg, vanilla extract, and mix well.
  • In another bowl, combine the oats, flour, salt, and baking powder.
  • Gradually mix the dry ingredients into the wet ingredients until well combined.
  • Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Remove from oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
