Description
These Gooey Sourdough Discard Cinnamon Roll Bites are an easy and sweet treat perfect for sharing with friends and family. Made with leftover sourdough discard, they are fluffy, cinnamon-sugar coated, and drizzled with a delicious vanilla glaze.
Ingredients
1 cup sourdough discard (unfed)
1 1/4 cups all-purpose flour
1/4 cup plain yogurt or milk
1 egg
2 tbsp sugar
1/4 cup melted butter or oil
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup brown sugar
1 1/2 tsp cinnamon
2 tbsp melted butter (for rolling)
3/4 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla extract
Instructions
- In a large mixing bowl, combine the sourdough discard, yogurt or milk, egg, sugar, and melted butter or oil, mixing well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until a dough forms.
- Turn the dough onto a floured surface and knead gently until smooth. Roll the dough out into a rectangle about 1/4 inch thick.
- Brush the rolled dough with melted butter, then sprinkle evenly with the brown sugar and cinnamon.
- Roll the dough tightly into a log and cut it into bite-sized pieces.
- Preheat the oven to 350°F (175°C) and place the bites on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- While baking, prepare the vanilla glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
- Once the cinnamon roll bites are out of the oven, drizzle them with the vanilla glaze and let cool slightly before serving.
Notes
You can use either plain yogurt or milk depending on what you have on hand. These bites are best served warm and can be stored in an airtight container for a few days.
