Ginger-Carrot Beef Rolls with Cranberries & Walnuts are a delightful combination of savory and sweet flavors, enveloped in crispy egg roll wrappers, perfect for a snack or appetizer.
Ingredients
1 pound ground beef
3 tablespoons olive oil
2 garlic cloves minced
1–2 inches fresh ginger grated
1 tablespoon chili oil
2 tablespoons honey
1 teaspoon sesame oil
1/2 cup finely shredded carrots
1/4 cup dried cranberries chopped
1/4 cup chopped walnuts
1/4 cup chopped fresh parsley
1/4 cup shredded mozzarella
8–10 egg roll wrappers
Cooking oil for frying
1/4 cup granulated sugar
1/4 cup honey
1/4 cup water
1/2 cup rice vinegar
3 garlic cloves grated
2 teaspoons crushed red pepper flakes
1 teaspoon paprika
1 tablespoon flour
1/2 tablespoon water
2 tablespoons chopped fresh parsley for garnish
Instructions
- In a skillet, heat 3 tablespoons of olive oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
- Add the ground beef, chili oil, honey, sesame oil, shredded carrots, cranberries, walnuts, parsley, and mozzarella to the skillet. Cook until the beef is browned and the mixture is well combined, about 8-10 minutes.
- Remove from heat and let cool slightly. Place a spoonful of the beef mixture onto each egg roll wrapper and roll them tightly, sealing the edges with a little water.
- In a deep pan, heat cooking oil over medium-high heat. Fry the rolls until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- For the sweet chili sauce, combine sugar, honey, water, rice vinegar, grated garlic, crushed red pepper flakes, and paprika in a saucepan. Heat until sugar dissolves.
- Mix flour with 1/2 tablespoon water to create a slurry and add to the sauce, stirring until thickened. Remove from heat.
- Serve the beef rolls with the sweet chili sauce and garnish with chopped parsley.
Notes
Feel free to adjust the spiciness of the rolls and sauce by varying the amount of chili oil and red pepper flakes. You can also bake the rolls instead of frying for a healthier option.
