3 tablespoons extra-virgin olive oil

3 tablespoons unsalted butter

1/2 cup finely chopped sweet onion (adds mild sweetness)

3 large cloves garlic

1 tablespoon fresh thyme

3/4 teaspoon fresh rosemary

Instructions

  • Preheat your oven to 400°F (200°C) and grease a round baking dish or cast-iron skillet with some melted butter.
  • In a large bowl, combine sliced potatoes, cornstarch, salt, pepper, half of the olive oil, half of the melted butter, Parmesan cheese, sweet onion, minced garlic, thyme, rosemary, and lemon zest.
  • Toss gently to coat the potatoes, ensuring even distribution of the spices and herbs.
  • Layer the potato mixture in the greased baking dish, pressing down as you go to create a compact layer.
  • Drizzle the remaining olive oil and butter over the top of the layered potatoes.
  • Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and crispy.
  • Allow the galette to cool slightly before slicing and serving. Garnish with additional thyme and rosemary if desired.
