Garlic Shrimp Mofongo is a delightful dish that pairs crispy mofongo with zesty garlic shrimp, creating a delicious meal that can be made in just five easy steps.
Ingredients
3–4 large green plantains (very firm
not yellow or black)
1/2 cup chicharrones (fried pork rinds)
crushed
or bacon bits
3–4 cloves garlic
minced
1/4 cup olive oil
plus more for frying
1/4 cup chicken broth (or vegetable broth)
Salt to taste
1 lb large shrimp
peeled and deveined
4–5 cloves garlic
minced
2 tablespoons olive oil
1 tablespoon fresh lime juice
1/4 cup fresh cilantro
chopped
1/4 teaspoon red pepper flakes (optional
for a kick)
Salt and black pepper to taste
Instructions
- Start by peeling the green plantains and cutting them into 1-inch pieces.
- In a pot of boiling salted water, cook the plantain pieces until tender, about 15-20 minutes, then drain.
- In a large bowl, mash the cooked plantains with crushed chicharrones, minced garlic, olive oil, chicken broth, and salt until smooth.
- Form the mash into a ball or patty shape and fry in hot oil until golden and crispy on the outside.
- For the shrimp, sauté minced garlic in olive oil, add shrimp, lime juice, cilantro, red pepper flakes, and season to taste, cooking until shrimp are pink and cooked through.
Notes
Make sure to use very firm plantains for the perfect texture in the mofongo. You can adjust the spice level by modifying the amount of red pepper flakes in the shrimp.
