2 large eggs

4 teaspoons (16g) sugar

3 tablespoons (42g) unsalted butter at room temperature

cut into 1/2-inch pieces

Neutral oil

1/16 to 1/8 teaspoon flaky finishing salt

1/4 cup (56g) unsalted butter at room temperature

1/2 teaspoon garlic powder

1 tablespoon fresh parsley

minced

2 tablespoons grated Parmigiano-Reggiano cheese

Instructions

  • In a small saucepan, whisk together the 1/3 cup whole milk and 2 tablespoons bread flour over medium heat until thickened to form the tangzhong, then let it cool.
  • In a large bowl, combine the 1/3 cup plus 1 tablespoon whole milk and active dry yeast; let it sit until frothy, about 5 minutes.
  • Add the cooled tangzhong, 2 1/3 cups bread flour, 1 egg, kosher salt, and sugar to the yeast mixture; mix until a dough forms.
  • Incorporate the butter pieces into the dough and knead until smooth and elastic, about 8-10 minutes.
  • Grease a bowl with neutral oil, place the dough in it, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Prepare the compound butter by mixing the 1/4 cup unsalted butter, garlic powder, minced parsley, and grated Parmigiano-Reggiano in a bowl.
  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • Punch down the risen dough and divide it into equal pieces; roll each into a ball and dip in the compound butter.
  • Arrange the dough balls in the prepared baking dish, cover, and let rise for another 30 minutes.
