Instructions
- In a small saucepan, whisk together the 1/3 cup whole milk and 2 tablespoons bread flour over medium heat until thickened to form the tangzhong, then let it cool.
- In a large bowl, combine the 1/3 cup plus 1 tablespoon whole milk and active dry yeast; let it sit until frothy, about 5 minutes.
- Add the cooled tangzhong, 2 1/3 cups bread flour, 1 egg, kosher salt, and sugar to the yeast mixture; mix until a dough forms.
- Incorporate the butter pieces into the dough and knead until smooth and elastic, about 8-10 minutes.
- Grease a bowl with neutral oil, place the dough in it, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Prepare the compound butter by mixing the 1/4 cup unsalted butter, garlic powder, minced parsley, and grated Parmigiano-Reggiano in a bowl.
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Punch down the risen dough and divide it into equal pieces; roll each into a ball and dip in the compound butter.
- Arrange the dough balls in the prepared baking dish, cover, and let rise for another 30 minutes.
- Brush the tops with the remaining egg and sprinkle with flaky finishing salt and additional Parmesan.
- Bake for 25-30 minutes until golden brown; serve warm.
Notes
For extra flavor, you can add herbs like rosemary or thyme to the compound butter. Ensure the dough rises adequately for the best texture.
