Ingredients
2 pounds Yukon Gold potatoes
cut into 1-inch-thick slices
2 tablespoons butter
melted
2 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh thyme
¾ teaspoon salt
½ teaspoon ground pepper
3 large cloves garlic
grated
1 cup low-sodium vegetable broth or chicken broth
¼ cup grated Parmesan cheese
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine melted butter, olive oil, thyme, salt, pepper, and grated garlic.
- Add the potato slices to the bowl and toss them until thoroughly coated in the mixture.
- Arrange the coated potato slices in a single layer in a baking dish.
- Pour the vegetable or chicken broth around the potatoes.
- Sprinkle grated Parmesan cheese on top of the potatoes.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes or until the potatoes are tender and the cheese is golden brown.
- Let them cool for a few minutes before serving.
Notes
For extra crispy tops, broil the potatoes for an additional 2-3 minutes after baking.
