4 tablespoons unsalted butter

4 to 5 garlic cloves

1/3 cup dry white wine

1 tablespoon lemon juice

2 tablespoons chopped fresh parsley

Instructions

  • Pat the scallops dry with paper towels and season both sides with salt, pepper, and paprika.
  • In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  • Once the butter is bubbling, add the scallops in a single layer, searing them for about 2-3 minutes per side, or until they are golden brown and opaque in the center.
  • Remove the scallops from the skillet and set aside on a plate.
  • In the same skillet, reduce the heat to medium and add the remaining butter, followed by the minced garlic.
  • Sauté the garlic for about 1 minute, or until fragrant, then add the white wine (or broth) and lemon juice to deglaze the pan, scraping up any brown bits.
  • Allow the sauce to simmer for another 2-3 minutes until slightly reduced.
  • Return the scallops to the skillet, tossing them gently in the sauce to coat.
  • Garnish with fresh parsley and lemon slices before serving.

Notes

Make sure not to overcrowd the skillet when searing the scallops to achieve a nice golden brown crust.
