Ingredients
1 pound fresh bay or sea scallops
dry packed
salt and fresh ground pepper
to taste
1/4 teaspoon sweet paprika
4 tablespoons unsalted butter
divided
4 to 5 garlic cloves
minced
1/3 cup dry white wine

1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
lemon slices

Instructions
- Pat the scallops dry with paper towels and season both sides with salt, pepper, and paprika.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat.
- Once the butter is bubbling, add the scallops in a single layer, searing them for about 2-3 minutes per side, or until they are golden brown and opaque in the center.
- Remove the scallops from the skillet and set aside on a plate.
- In the same skillet, reduce the heat to medium and add the remaining butter, followed by the minced garlic.
- Sauté the garlic for about 1 minute, or until fragrant, then add the white wine (or broth) and lemon juice to deglaze the pan, scraping up any brown bits.
- Allow the sauce to simmer for another 2-3 minutes until slightly reduced.
- Return the scallops to the skillet, tossing them gently in the sauce to coat.
- Garnish with fresh parsley and lemon slices before serving.
Notes
Make sure not to overcrowd the skillet when searing the scallops to achieve a nice golden brown crust.
