Ingredients
2x 9oz/250g Chicken Breasts brought close to room temp
1/4 cup / 40g Plain / All Purpose Flour
1/2 cup / 120ml Chicken Stock
6 tbsp / 90g / 3.2oz Unsalted Butter divided into tbsp chunks
2 cloves of Garlic minced
1 tbsp finely diced Fresh Parsley
1 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Salt plus more to taste
1/2 tsp Black Pepper plus more to taste
1 Lemon divided into 4 wedges
Instructions
- Start by seasoning the chicken breasts with salt, black pepper, and garlic powder on both sides.
- Dredge each chicken breast in the flour, shaking off any excess.
- In a large skillet, heat the olive oil and 3 tablespoons of butter over medium-high heat until melted.
- Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the garlic and sauté for about 1 minute.
- Pour in the chicken stock and scrape up any browned bits from the pan, allowing it to simmer for a couple of minutes.
- Return the chicken to the skillet and add the remaining butter, allowing it to melt and create a sauce.
- Sprinkle with fresh parsley and serve with lemon wedges on the side.
Notes
For extra flavor, let the chicken marinate in the garlic powder, salt, and pepper for 30 minutes before cooking. Adjust seasoning to taste.
