A refreshing and colorful Garden Pasta Salad that’s perfect for potlucks or a light meal.
Ingredients

1 (16 ounce) package tri-color rotini pasta
2 large tomatoes
diced
2 stalks celery
chopped
½ cup thinly sliced carrots
½ cup chopped green bell pepper
½ cup cucumber
peeled and thinly sliced
¼ cup chopped onion
1 ½ (16 ounce) bottles Italian-style salad dressing
or to taste
½ cup grated Parmesan cheese
Instructions
- Cook the tri-color rotini pasta according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooled pasta, diced tomatoes, chopped celery, sliced carrots, chopped green bell pepper, sliced cucumber, and chopped onion.
- Pour the Italian-style salad dressing over the salad ingredients, and toss gently to combine.
- Sprinkle grated Parmesan cheese on top and toss lightly again.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
Feel free to add any other vegetables or proteins you prefer. This salad can be customized to your taste.
