Description
Experience the delightful tradition of Galette des Rois, or French King Cake, a rich almond pastry perfect for celebrating Epiphany and surprising guests with a hidden fève.
Ingredients
1 1/2 cup (150g) almond meal
1/2 cup (100g) sugar
1/2 tsp salt
zest of 1/2 orange (organic)
3 1/2 ounces (100g) unsalted butter
cubed
at room temperature
2 large eggs
at room temperature
1/8 teaspoon almond extract
2 puff pastry sheets (450g ; 225g each)
A fève (or a whole almond
if you can’t find one)
1 egg yolk
1 teaspoon milk
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together the almond meal, sugar, salt, and orange zest.
- Add the cubed butter and beat until the mixture is creamy.
- Incorporate the eggs one at a time, followed by the almond extract, mixing until smooth.
- Roll out one puff pastry sheet and place it on a baking tray lined with parchment paper.
- Spread the frangipane filling over the pastry, leaving a margin around the edges.
- Insert the fève into the filling, then cover with the second puff pastry sheet.
- Seal the edges by pressing them down with a fork and brush the top with a mixture of egg yolk and milk.
- Score a design on the top with a sharp knife and bake for 30 minutes or until golden brown.
Notes
Serve warm or at room temperature, and don’t forget to designate a king or queen from the slice that includes the fève!
