1 cup Medjool dates
pitted and packed
1/2 cup hot water
1/2 cup unsweetened cocoa powder
1/4 cup coconut oil
melted
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup dark chocolate chips (optional
for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a bowl, soak the pitted Medjool dates in hot water for about 10 minutes to soften.
- Once softened, blend the dates with the soaking water until smooth.
- In a large mixing bowl, combine the date puree with cocoa powder, melted coconut oil, eggs, vanilla extract, baking powder, and salt. Mix until well combined.
- Pour the brownie batter into the prepared baking pan, smoothing it out evenly.
- If desired, sprinkle dark chocolate chips on top of the batter.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow to cool in the pan before slicing into squares and serving.
Notes
For denser brownies, do not overbake. You can also add nuts for added texture.
