1 cup buttermilk (or milk with 1 tbsp lemon juice)

1 ½ cups fresh strawberries

hulled and diced

½ cup powdered sugar

2–3 tbsp strawberry juice or milk


Instructions

  • Preheat your oven to 350°F (175°C) and grease a sheet cake pan.
  • In a bowl, mix together the flour, baking powder, baking soda, and salt.
  • In another large bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients, and mix until just combined.
  • Gently fold in the diced strawberries to avoid breaking them.
  • Pour the batter into the prepared sheet cake pan and spread evenly.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely on a wire rack before glazing.
  • To make the glaze, whisk together the powdered sugar and strawberry juice (or milk) until smooth and drizzle over the cooled cake.
