4 oz crumbled feta cheese
1 1/2 cups chopped asparagus
1 cup green peas
3 tbsp chopped basil
8 oz pasta
3 tbsp chopped mint
4 to 5 cups fresh arugula

juice and zest of 1/2 lemon
1/3 cup olive oil
1 large or 2 small shallots
1 tsp honey
2 tbsp red wine vinegar
1/2 tsp dijon mustard
Instructions
- Cook the orzo pasta according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked orzo, chopped asparagus, green peas, basil, mint, arugula, and feta cheese.
- In a separate bowl, whisk together the lemon juice and zest, minced shallots, honey, red wine vinegar, dijon mustard, salt, pepper, and olive oil to create the vinaigrette.
- Pour the vinaigrette over the pasta salad and toss to combine evenly.
- Season with additional salt and pepper to taste, and serve chilled or at room temperature.
