This French Onion Short Rib Soup Recipe combines the rich flavors of tender short ribs and caramelized onions, topped with melted Gruyère cheese for a comforting dish.

2 pounds short ribs
bone-in
4 large onions
thinly sliced
4 cloves garlic
minced
4 cups beef broth
1 cup dry red wine
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon fresh thyme
1 bay leaf
Salt and pepper
1 baguette
sliced
2 cups shredded Gruyère cheese
Fresh parsley
chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large oven-safe pot, heat olive oil and butter over medium heat.
- Add the short ribs and brown them on all sides; remove and set aside.
- In the same pot, add sliced onions and cook until caramelized, about 20 minutes.
- Stir in minced garlic, thyme, bay leaf, salt, and pepper; cook for another minute.
- Pour in red wine (if using) and scrape up any browned bits from the bottom of the pot.
- Return the short ribs to the pot and add the beef broth.
- Cover and transfer to the oven; cook for 2.5 to 3 hours until the meat is tender.
- Remove the short ribs, shred the meat, and discard the bones; return the meat to the soup.
- Serve in bowls topped with sliced baguette and shredded Gruyère cheese, then broil until cheese is bubbly.
Notes
For extra depth of flavor, let the soup sit and refrigerate overnight; reheat before serving. The red wine can be omitted for a non-alcoholic version.
