Instructions
- In a bowl, whisk the ricotta cheese, milk, and egg yolks together until smooth.
- In another bowl, combine the flour, baking powder, sugar, and salt.
- Gently fold the dry ingredients into the ricotta mixture.
- In a separate bowl, beat the egg whites until stiff peaks form and then gently fold them into the batter.
- Heat butter in a skillet over medium heat and scoop 1/4 cup of batter for each pancake, cooking until bubbles form on the surface, then flip and cook until golden brown.
