2 tbsp canola oil (or any other neutral oil like grapeseed)

1 tsp ground cumin (for best flavor and aroma)

1/4 cup all-purpose flour (I use King Arthur all-purpose flour)

1/4 tsp black pepper

1/4 cup grated parmesan cheese

1/2 tsp garlic powder

2 tbsp water

tahini sauce for serving

1 tbsp chopped parsley

1 can chickpeas (15 oz

rinsed and thoroughly drained)


Instructions

  • In a mixing bowl, mash the rinsed chickpeas until mostly smooth.
  • Add the salt, cumin, black pepper, parmesan cheese, garlic powder, and flour to the mashed chickpeas. Mix until well combined.
  • Stir in the water until the mixture holds together.
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Form the chickpea mixture into small patties and place them on the prepared baking sheet.
  • Drizzle the patties with canola oil and bake for 20-25 minutes, turning halfway through until golden brown.
  • Serve warm with tahini sauce and sprinkle with chopped parsley.

Notes

For a vegan version, omit the parmesan cheese or use a plant-based alternative.
