Ingredients

Scale

4 ounces (1 stick) unsalted butter

room temperature

½ cup light brown sugar

gently packed

¼ cup white granulated sugar

1 large egg

room temperature

1 teaspoon vanilla extract

245 grams all-purpose flour

¼ teaspoon kosher salt

½ teaspoon baking soda

½ teaspoon cream of tartar

1 teaspoon ground cinnamon

⅓ cup granulated sugar for rolling

2 tablespoons ground cinnamon for rolling

4 ounces white chocolate

chopped or broken into small pieces

2 tablespoons eggnog

1 tablespoon dark rum or ¼ teaspoon rum extract

¼ teaspoon freshly grated nutmeg

pinch of salt

Instructions

  • In a large bowl, cream together the butter, light brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, salt, baking soda, cream of tartar, and ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Chill the dough for 30 minutes in the refrigerator.
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small bowl, mix the granulated sugar and ground cinnamon for rolling.
  • Scoop out tablespoon-sized amounts of dough and roll into balls, then roll in the cinnamon sugar mixture.
  • Place the dough balls on the prepared baking sheet and make an indentation in the center of each with your thumb.
  • Bake for 10-12 minutes until set and lightly golden around the edges.
  • While the cookies cool, prepare the ganache by melting the white chocolate in a heatproof bowl over simmering water.
  • Once melted, stir in the eggnog, dark rum (if using), nutmeg, and a pinch of salt until smooth.
  • Let the ganache sit for about 30 minutes to thicken slightly.
  • Fill the thumbprint indentations in each cookie with the eggnog ganache.
  • Allow the ganache to set before serving.

Notes

Ensure the butter is at room temperature for easier mixing, and consider using high-quality white chocolate for a richer ganache flavor.
