Ingredients
4 ounces (1 stick) unsalted butter

1 large egg

2 tablespoons ground cinnamon for rolling
4 ounces white chocolate
chopped or broken into small pieces
2 tablespoons eggnog
1 tablespoon dark rum or ¼ teaspoon rum extract
¼ teaspoon freshly grated nutmeg
pinch of salt
Instructions
- In a large bowl, cream together the butter, light brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, salt, baking soda, cream of tartar, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough for 30 minutes in the refrigerator.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix the granulated sugar and ground cinnamon for rolling.
- Scoop out tablespoon-sized amounts of dough and roll into balls, then roll in the cinnamon sugar mixture.
- Place the dough balls on the prepared baking sheet and make an indentation in the center of each with your thumb.
- Bake for 10-12 minutes until set and lightly golden around the edges.
- While the cookies cool, prepare the ganache by melting the white chocolate in a heatproof bowl over simmering water.
- Once melted, stir in the eggnog, dark rum (if using), nutmeg, and a pinch of salt until smooth.
- Let the ganache sit for about 30 minutes to thicken slightly.
- Fill the thumbprint indentations in each cookie with the eggnog ganache.
- Allow the ganache to set before serving.
