2 medium onions
8 garlic cloves
3 pounds beef chuck roast
2 tablespoons garlic-parsley seasoning
1 teaspoon ground black pepper
3 medium carrots
2–3 celery stalks
1–2 parsnips
1 pound mushrooms
2 cups beef broth
2 bay leaves
2–3 sprigs fresh thyme or rosemary
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add chopped onions and garlic, sauté until soft.
- Season the beef chuck roast with garlic-parsley seasoning and black pepper. Add the beef to the pot, browning on all sides.
- Add carrots, celery, parsnips, and mushrooms to the pot. Pour in the beef broth and add bay leaves and herbs.
- Bring to a simmer, cover, and reduce heat to low. Cook for about 2-3 hours until the beef is tender.
