Ingredients
2 ¾ cups all-purpose flour (sifted)
1 teaspoon baking soda
½ teaspoon baking powder
1 cup unsalted butter (softened)
1 ½ cups granulated sugar
1 large egg (room temperature)
1 teaspoon vanilla extract
½ teaspoon almond extract (optional)
3 tablespoons milk
Extra granulated sugar (for rolling)
Instructions
Prepare Dry Ingredients: In a medium bowl, whisk flour, baking soda, and baking powder. Set aside.
Cream Butter and Sugar: In a large mixing bowl, beat butter and sugar until light and fluffy (2–3 minutes).
Add Wet Ingredients: Beat in egg, vanilla, almond extract, and milk until smooth.
Combine Dry and Wet: Add dry mixture gradually. Mix until just combined. Dough should be soft but not sticky. Add flour if needed.
Shape Cookies: Scoop 1 tablespoon dough, roll into a ball, and coat in sugar. Place 2 inches apart on lined baking sheet.
Bake: Preheat oven to 350°F (175°C). Bake 8–10 minutes until edges are set and lightly golden. Cool 5 minutes on sheet, then transfer to rack.
Notes
Chill dough for 30 minutes if cookies spread too much.
For chewier cookies, underbake slightly; for crispier cookies, bake 2 minutes longer.
Rotate pans halfway through for even baking.
