Ingredients
12 large eggs
½ cup milk (or dairy-free alternative)
½ teaspoon salt
½ teaspoon black pepper
1 cup cherry tomatoes
halved
1 cup spinach
chopped
½ cup bell peppers
diced
½ cup mushrooms
sliced
½ cup shredded cheese (cheddar
feta
or mozzarella)
½ cup cooked protein (bacon
sausage
ham
or tofu)
½ teaspoon garlic powder
½ teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
- In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika until well combined.
- Add the cherry tomatoes, spinach, bell peppers, mushrooms, cheese, and cooked protein to the egg mixture and stir until evenly distributed.
- Pour the mixture onto the prepared baking sheet and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes or until the frittata is set and lightly golden on top.
- Remove from oven, allow to cool slightly, then slice into pieces and serve warm.
