Description
This Easy Sheet Pan Chicken al Pastor is a flavorful and effortless dish featuring marinated chicken thighs, pineapple, and onion, all baked to perfection on one pan.
Ingredients
1 ½ pounds boneless
skinless chicken thighs
½ yellow onion thinly sliced
al pastor marinade
2 cups finely diced pineapple
3 cloves garlic
2–3 chipotle peppers from a can packed in adobo sauce
½ cup orange juice
1 tablespoon apple cider vinegar
2 tablespoons brown sugar or honey or agave
1 tablespoon achiote paste
1 tablespoon ancho chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 ½ teaspoons kosher salt
Instructions
- Preheat your oven to 400°F (200°C).
- In a blender, combine the garlic, chipotle peppers, orange juice, apple cider vinegar, brown sugar, achiote paste, ancho chili powder, ground cumin, dried oregano, and kosher salt. Blend until smooth to create the marinade.
- Place the chicken thighs in a large bowl, pour the marinade over them, and toss to coat well. Let marinate for at least 15 minutes.
- On a large sheet pan, spread out the sliced onions and marinated chicken thighs, then scatter the diced pineapple around.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and browned, stirring halfway through.
- Remove from the oven and let rest for a few minutes before serving.
Notes
Use fresh pineapple for a more vibrant flavor. Adjust the spiciness of the dish by varying the amount of chipotle peppers in the marinade.
