¾ cup freshly grated Monterey Jack / Colby cheese


Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Boil the small red potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
