Ingredients

1 Tbsp olive oil

8 oz andouille sausage sliced ¼-inch thick

1 medium yellow onion diced

2 celery ribs diced

1 green bell pepper diced

1 red bell pepper diced

3 cloves garlic minced

1½ tsp Cajun seasoning (no-salt-added)

½ tsp dried thyme

½ tsp smoked paprika

â…› tsp cayenne pepper (optional)

1 cup long-grain white rice rinsed

14.5 oz can fire-roasted diced tomatoes

2½ cups low-sodium chicken broth

1 bay leaf

1 lb large shrimp peeled & deveined (26/30 count)

¼ cup chopped fresh parsley

1 Tbsp fresh lemon juice

Salt & black pepper to taste


Instructions

  • In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
  • Add diced onion, celery, green bell pepper, and red bell pepper. Sauté for 5-7 minutes or until the vegetables are tender.
  • Stir in minced garlic, Cajun seasoning, dried thyme, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  • Add rinsed rice, fire-roasted diced tomatoes, chicken broth, and bay leaf. Stir well to combine.
  • Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  • Stir in the shrimp, cover again, and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
  • Remove from heat, stir in chopped parsley and lemon juice. Season with salt and black pepper to taste.
  • Serve hot and enjoy your one pot jambalaya!

Notes

Feel free to adjust the level of spice by modifying the cayenne pepper. You can also substitute the shrimp with chicken or other seafood as desired.
