This Easy Italian Lemon Mascarpone Tart is a delightful dessert that combines a buttery pastry crust with a creamy lemon filling, perfect for any occasion.

125 ml sour cream
250 g plain flour
200 g cold butter
250 g fresh ricotta cheese
250 g mascarpone cheese
2/3 cup sugar
2 large whole eggs
2 large egg yolks
1 tablespoon finely grated lemon rind
80 ml fresh lemon juice
1 lemon thinly sliced into rounds
1/3 cup castor sugar
1/3 cup water
Instructions
- Preheat your oven to 180°C (350°F) and prepare a tart pan by greasing it lightly.
- In a bowl, mix the cold cubed butter and flour until crumbly. Add the sour cream and combine to form a dough.
- Press the dough into the tart pan evenly and prick the base with a fork. Chill for 30 minutes.
- Bake the crust for about 15-20 minutes until lightly golden. Let it cool.
- In another bowl, beat together the ricotta, mascarpone, sugar, eggs, egg yolks, lemon rind, and lemon juice until smooth.
- Pour the filling into the cooled tart crust and bake for an additional 20-25 minutes until set.
- For the lemon slices, combine castor sugar and water in a saucepan, bring to a simmer, and cook until syrupy. Add lemon slices and simmer for a few minutes until translucent.
- Remove from heat and let cool. Top the tart with the lemon slices before serving.
Notes
For a more intense lemon flavor, increase the lemon zest and juice. Serve chilled for the best flavor!
