1 pound (450g) lean (93%) ground turkey
3 cups shredded medium zucchini (about 2 medium zucchinis)
1 small yellow onion
diced
2 cloves garlic
minced
1 can (14.5 oz / 410g) diced tomatoes
no-salt-added preferred
1 cup (113g) low-fat shredded mozzarella cheese
2 large eggs
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in the shredded zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
- In a bowl, whisk together the eggs and then add to the turkey mixture, mixing well.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Sprinkle the shredded mozzarella cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
