4 boneless chicken breasts or 8 chicken thighs

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon dried oregano

¼ teaspoon cayenne pepper

4 cups warm water

¼ cup kosher salt

2 tablespoons brown sugar

2 cloves garlic

smashed


Instructions

  • Prepare the brine by dissolving ¼ cup kosher salt and 2 tablespoons brown sugar in 4 cups of warm water. Add 2 smashed cloves of garlic and let it cool.
  • Submerge the chicken in the brine and refrigerate for at least 30 minutes.
  • Preheat the grill to medium-high heat.
  • In a small bowl, mix olive oil, salt, black pepper, garlic powder, paprika, dried oregano, and cayenne pepper.
  • Remove chicken from the brine, pat dry, and brush with the spice mixture.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked through.
  • Let the chicken rest for a few minutes before slicing and serving.

Notes

For extra flavor, marinate the chicken in the spice mixture for a few hours before grilling.
