Ingredients
Chicken and Pasta Base
2 tbsp olive oil
1 tbsp unsalted butter
2 medium chicken breasts (about 400 g), sliced thin
300 g (10.5 oz) penne or fettuccine pasta
3 cups (750 ml) chicken broth
1 cup (250 ml) water
Mushroom Cream Sauce
1 tbsp olive oil
2 cups (200 g) sliced mushrooms (cremini, button, or mixed)
3 cloves garlic, minced
1 small onion, finely chopped
1 cup (250 ml) heavy cream
½ cup (50 g) grated Parmesan cheese
½ tsp salt
¼ tsp black pepper
½ tsp paprika (optional)
Garnish (Optional)
Fresh parsley, chopped
Extra Parmesan cheese
Instructions
Step 1: Prepare the Chicken
Heat olive oil and butter in a deep skillet over medium-high heat.
Add chicken, season with salt, pepper, and paprika.
Cook for 4–5 minutes per side until golden. Remove and set aside.
Step 2: Cook the Vegetables
Add olive oil to the same pan.
Sauté onion for 2 minutes until soft.
Add mushrooms and cook 5 minutes until browned.
Add garlic and stir for 30 seconds.
Step 3: Add Liquids and Pasta
Pour in chicken broth and water, scraping the pan bottom.
Add pasta and submerge completely.
Bring to a boil, then reduce heat. Cook 10–12 minutes until al dente.
Step 4: Make the Sauce
Reduce heat to low. Stir in heavy cream and Parmesan.
Return chicken to pan. Simmer 2–3 minutes until sauce thickens.
Adjust seasoning.
Step 5: Serve
Remove from heat, garnish with parsley and Parmesan, and serve warm.
Notes
Do not overcook pasta; it continues cooking in the sauce.
Add a splash of broth or milk if reheating leftovers.
Use freshly grated Parmesan for smoother sauce texture.
