This Easy Chocolate Eclair Cake is a delightful no-bake dessert that layers vanilla pudding and graham crackers, topped with rich chocolate frosting for a delicious treat.
Ingredients
2 (3.4-ounce) packages instant vanilla pudding mix
3 1/2 cups milk
1 (8-ounce) container whipped topping thawed
1 box graham crackers
1 can dark chocolate frosting
Instructions
- In a large bowl, whisk together the instant vanilla pudding mix and milk until well combined and thickened.
- Fold in the thawed whipped topping until smooth.
- In a 9×13 inch baking dish, layer graham crackers at the bottom.
- Spread half of the pudding mixture over the graham crackers, followed by another layer of graham crackers.
- Add the remaining pudding mixture and top with a final layer of graham crackers.
- Spread the dark chocolate frosting evenly over the top layer of graham crackers.
- Refrigerate for at least 4 hours or overnight to allow the cake to set before serving.
Notes
Note 1: Make sure to use instant pudding mix for the right consistency. Note 2: Whipped topping can be substituted with homemade whipped cream if desired. Note 3: For a sweeter topping, use milk chocolate frosting instead of dark.
