Ingredients

1 cups Granulated sugar

1 ½ cups Flour

1 ½ teaspoon Baking powder

1 teaspoon Baking soda

½ teaspoon Kosher salt

â…“ cups Vegetable oil

1 cups Hot coffee

2 teaspoon Vanilla extract

Chocolate buttercream: 340 g Butter

2 cups Powder sugar

½ cup Cocoa powder

1 teaspoon Vanilla extract

1 Pinch of salt

150 g Dark chocolate

Or Make Chocolate cream cheese frosting: 230 g Cream cheese softened

115 g Butter softened

½ teaspoon Kosher salt

3 ½ cups Powder sugar

1 teaspoon Vanilla extract


Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a large bowl, whisk together the eggs and granulated sugar until well combined.
  • Add the flour, baking powder, baking soda, cocoa powder, and kosher salt to the wet mixture; stir until just combined.
  • Pour in the vegetable oil, hot coffee, and vanilla extract; mix until the batter is smooth.
  • Carefully fill the cupcake liners about 2/3 full with the batter.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Remove from the oven and let cool completely.
  • Prepare the frosting by beating the butter, powdered sugar, cocoa powder, vanilla, and salt until creamy; melt dark chocolate and mix in until well combined.
  • Frost cooled cupcakes with chocolate frosting as desired.

Notes

Feel free to substitute the chocolate frosting with cream cheese frosting for a different flavor twist.
