Description
These Easy Chocolate Cheesecake Bars feature a rich chocolate cheesecake filling on a crunchy Oreo cookie crust, topped with a luscious chocolate ganache. Perfect for any chocolate lover!
Ingredients
1 regular full-size package Oreo cookies crushed into fine crumbs
8 tablespoons unsalted butter melted
12 ounces bittersweet chocolate coarsely chopped
1 and 1/2 pounds full-fat cream cheese at room temperature
1 cup granulated sugar
1/4 cup light brown sugar packed
2 tablespoons unsweetened natural cocoa powder
4 large eggs plus 2 large egg yolks at room temperature
1 cup heavy cream at room temperature
2 teaspoons vanilla extract
16 ounces semi-sweet chocolate finely chopped
1 and 1/4 cups heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a mixing bowl, combine the Oreo cookie crumbs and melted butter, stirring until well combined.
- Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
- In a saucepan over low heat, melt the chopped bittersweet chocolate, stirring until smooth. Remove from heat and let cool slightly.
- In a large bowl, beat the cream cheese, granulated sugar, brown sugar, and cocoa powder until smooth.
- Add the eggs and egg yolks one at a time, mixing just until incorporated. Then, beat in the heavy cream, vanilla extract, and the melted chocolate until smooth and creamy.
- Pour the chocolate cheesecake filling over the prepared crust in the baking pan. Smooth the top with a spatula.
- Bake in the preheated oven for 30 minutes, or until the center is set but slightly jiggly. Remove from the oven and let cool completely.
- For the ganache, heat the heavy cream in a saucepan until just simmering. Pour over the chopped semi-sweet chocolate in a bowl and let sit for a few minutes, then stir until smooth.
- Once the cheesecake is cool, pour the ganache over the top and spread evenly. Refrigerate for at least 4 hours or until set.
- Cut into bars, serve, and enjoy!
Notes
For best results, use full-fat cream cheese and allow all ingredients to come to room temperature before mixing. Store leftovers in an airtight container in the refrigerator.
