Ingredients
Biscoff cookies
Strong coffee or espresso
Mascarpone Cheese
Biscoff cookie butter
Sugar
Heavy cream
Salt

Instructions
- Brew strong coffee or espresso and let it cool.
- In a bowl, whip the chilled heavy cream until soft peaks form.
- In another bowl, combine mascarpone cheese, Biscoff cookie butter, and a small amount of sugar. Mix until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Quickly dip each Biscoff cookie into the coffee, then layer them in a baking dish.
- Spread half of the mascarpone mixture over the cookie layer.
- Repeat the layering process with the remaining cookies and mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust with cocoa powder if desired.
