Ingredients
Persian or English cucumbers
Salt
Rice vinegar
Soy sauce
Sesame oil
Sugar
Chili oil or red pepper flakes
Sesame seeds
Minced garlic (optional)
Instructions
- Slice the cucumbers thinly and place them in a mixing bowl.
- Sprinkle salt over the cucumbers and let them sit for about 10 minutes to draw out excess moisture.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, and chili oil or red pepper flakes.
- Drain the cucumbers and rinse them with cold water to remove excess salt.
- Combine the cucumbers with the dressing and mix well.
- If using, stir in minced garlic for extra flavor.
- Sprinkle sesame seeds on top before serving.
