Ingredients
1/4 tsp coarse salt
4 large eggs
1 tbsp chives (finely chopped for even flavor distribution)
1 tbsp unsalted butter (I like Kerrygold for this)
2 slices sourdough bread (toasted until golden brown)
1/2 cup ricotta cheese (whole milk preferred for creaminess)
Instructions
- In a skillet over medium heat, melt the unsalted butter.
- Crack the eggs into the skillet and sprinkle with coarse salt. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.
- While the eggs are cooking, toast the sourdough bread until golden brown.
- Spread the ricotta cheese evenly onto the toasted bread.
- Once the eggs are cooked, carefully place them on top of the ricotta toast.
- Garnish with finely chopped chives and serve immediately.
Notes
For extra flavor, you can add a sprinkle of black pepper or a drizzle of olive oil before serving.
