4 large eggs

1 tbsp chives (finely chopped for even flavor distribution)

2 slices sourdough bread (toasted until golden brown)

1/2 cup ricotta cheese (whole milk preferred for creaminess)


Instructions

  • In a skillet over medium heat, melt the unsalted butter.
  • Crack the eggs into the skillet and sprinkle with coarse salt. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  • While the eggs are cooking, toast the sourdough bread until golden brown.
  • Spread the ricotta cheese evenly onto the toasted bread.
