Description

This easy 20-minute homemade bread dough delivers soft, elastic, and versatile dough perfect for dinner rolls, quick loaves, flatbreads, and mini pizzas. Ready in just twenty minutes, it’s ideal for busy cooks or beginners craving fresh homemade bread without the long wait.

Ingredients

Scale

3 cups (360 g) all-purpose flour, plus extra for dusting

2 teaspoons (10 g) instant yeast

1 teaspoon (6 g) salt

1 tablespoon (12 g) sugar

1 cup (240 ml) warm water (110°F / 43°C)

2 tablespoons (30 ml) olive oil, plus extra for greasing

Optional additions for flavor:

½ cup (60 g) shredded cheese

1 teaspoon dried herbs (rosemary, thyme, or oregano)

1 tablespoon honey or maple syrup for a sweeter dough

Instructions

Prepare Ingredients and Workspace:
Measure all ingredients accurately. Ensure the water is warm (~110°F / 43°C) to activate the yeast. Lightly grease a mixing bowl and hands with olive oil.

Mix Dry Ingredients:
Combine flour, instant yeast, salt, and sugar in a large bowl. Whisk 30 seconds to evenly distribute.

Add Wet Ingredients:
Create a well in the dry ingredients, pour in warm water and olive oil. Stir until the mixture forms a slightly sticky ball. Add optional honey, cheese, or herbs now.

Knead the Dough:
Transfer to a floured surface. Knead 5–7 minutes using the heel of your hand, pressing and folding. Dough should be smooth, elastic, and slightly tacky. Add small amounts of flour if necessary.

Quick Rest:
Cover the dough with a kitchen towel and rest for 5 minutes to relax gluten.

Shape the Dough:
Shape as desired: rolls, loaf, flatbreads, or mini pizzas. Grease baking sheet or loaf pan lightly.

Optional Quick Rise:
Cover shaped dough and let rest 10 minutes for slightly airier bread.

Bake:
Preheat oven to 400°F (200°C). Bake small rolls 12–15 minutes, loaf 20–25 minutes, flatbreads 8–10 minutes, until golden brown and hollow-sounding.

Cool and Enjoy:
Remove from oven and cool on a wire rack for at least 5 minutes before slicing.

Notes

Dough should be slightly sticky but manageable; adjust with small amounts of flour if needed.

Over-kneading can make bread tough; knead just until elastic.

Optional add-ins like herbs, garlic, or cheese enhance flavor without affecting texture.
