Instructions
- Start by preparing the crust. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press the mixture firmly into a pie pan to form the crust, then refrigerate while you prepare the filling.
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- In another bowl, whip the heavy cream until soft peaks form, then gradually add the powdered sugar and vanilla extract.
- Fold the whipped cream into the cream cheese mixture until fully combined.
- Add the sweetened condensed milk to the mixture and gently fold until smooth.
- Divide the filling into separate bowls and add different gel food coloring to each, creating your desired pastel colors.
- Spoon dollops of each color into the crust, then use a knife or skewer to swirl the colors together.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
- Once set, garnish with whipped cream, Easter sprinkles, and mini chocolate eggs or pastel candies before serving.
