  • Diet: Vegetarian

Description

Celebrate Spring with this delightful Easter Puff Corn Crunch Snack Mix! Perfectly balanced with sweet and salty flavors, it’s an irresistible treat for kids and adults alike.

Ingredients

Puff corn or Corn Pops cereal

Mini pretzels

Unsalted butter

Light brown sugar

Light corn syrup

Salt

Baking soda

Vanilla extract

White chocolate chips or almond bark or candy melts

Pastel spring M&M’s

Easter sprinkles

Instructions

  • Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper.
  • In a medium saucepan over medium heat, melt the unsalted butter. Once melted, stir in the light brown sugar, light corn syrup, and salt. Bring the mixture to a boil, stirring constantly.
  • Allow the mixture to boil without stirring for 4-5 minutes. Remove from heat and carefully stir in the baking soda and vanilla extract. The mixture will bubble up, so be cautious.
  • In a large bowl, combine puff corn and mini pretzels. Pour the caramel mixture over the puff corn and pretzels, gently mixing until everything is evenly coated.
  • Spread the mixture on the prepared baking sheet and bake for 30 minutes, stirring every 10 minutes for even coating.
  • Once baked, remove from the oven and let cool for 10 minutes. While it’s cooling, melt the white chocolate chips (or almond bark/candy melts) and drizzle over the mixture.
  • Add pastel spring M&M’s and Easter sprinkles on top before the chocolate sets, allowing for a colorful finish.
  • Let the mix completely cool before breaking it apart and serving. Enjoy your delightful Easter treat!

Notes

For best results, be sure to stir the caramel mixture constantly while boiling to avoid burning. You can customize this mix with your favorite candies and add-ins.
