Ingredients
4 large eggs
Âľ cup granulated sugar
1 teaspoon vanilla extract
Âľ cup all-purpose flour
½ teaspoon baking powder
ÂĽ teaspoon salt
ÂĽ cup powdered sugar
1 cup heavy cream
2 tablespoons powdered sugar
½ teaspoon vanilla extract
½ cup pastel sprinkles or mini eggs
½ cup melted white chocolate

Instructions
- Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and granulated sugar until light and fluffy. Add the vanilla extract.
- Gently fold in the flour, baking powder, and salt until just combined.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes until golden and springy.
- While the cake is baking, prepare a clean kitchen towel dusted with powdered sugar.
- When the cake is done, immediately invert it onto the prepared towel, gently peel off the parchment paper, and roll the cake up using the towel. Let it cool.
- In a chilled bowl, whip the heavy cream, sifted powdered sugar, and vanilla extract until stiff peaks form.
- Unroll the cooled cake, spread the whipped cream filling evenly, and sprinkle with pastel candies.
- Roll the cake back up without the towel, then refrigerate for at least 30 minutes to set.
- Drizzle the melted white chocolate on top and add extra sprinkles or candies for decoration before slicing and serving.
