Ingredients
1 box white or yellow cake mix (13.25 oz.)
¼ cup flour
8 tablespoons unsalted butter
melted and cooled
1 large egg
1 large egg yolk
2 teaspoons pure vanilla extract
¼ cup sugar
for rolling
1 cup white chocolate chips
¼ cup heavy cream
58 M&Ms or 2 per cookie cup
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix the cake mix and flour until well combined.
- Add the melted butter, egg, egg yolk, and vanilla extract, then stir until the dough forms.
- Roll the dough into balls and coat them in sugar before placing them into the muffin tin.
- Bake for about 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and immediately press a small cup into each cookie to create a well.
- Let them cool before removing from the tin.
- For the ganache, heat the heavy cream until just simmering, then pour over the white chocolate chips and let sit for 2 minutes.
- Stir until smooth, then fill each cookie cup with the ganache.
- Top with M&Ms and allow to set before serving.
Notes
Make sure to let the cookie cups cool completely before adding the ganache to prevent melting. Feel free to customize the toppings with different colored candies for more festive fun!
